Being Alone

I've been 'home alone' this weekend, which makes me realize why cooking for two is always better than cooking for one. While I do like cooking for myself, there is just something great about being able to have someone else appreciate whats been made. I take more joy going out of my way and making a grand meal for someone else. So anyway, this weekend I've mostly just settled on snacking or eating anything that is simple and convenient. The following pictures are of lasagna that i made a long time ago. Maybe doesn't look the greatest but tasted oh so delicious. It is basically just lots and lots of cheese and cottage cheese and spinach and noodles and tomato sauce.

This is our easter meal.  

And I end with the cutest kitty and puppy.

A day gone by.
I never feel like I accomplish anything even though I must spend all day doing something.
I moved Clive into the sun. my wonderful new jade plant.

I want to be a child again. I'd be very successful at it.

I hope most of my writing won't be like this. I want to be more concrete with more focused topics.

Pea Soup: of the Split Variety

I've made two soups this year.
1) lentil soup
2) split-pea soup

I am now an expert.









For delicious *vegetarian split pea soup
-use about half a bag of peas. or maybe around 1 cup.
-veggie broth
-various seasonings found in cabinet (I used salt, pepper, oregano, garlic, basil, mint,onion)
-touch of olive oil (but its only worth it if you have really great olive oil with actual flavor)

 Boil the peas in the veggie broth for about an hour or until all the peas are soft. when peas are getting soft stir them around/squish them so the broth starts getting pea-y. I did a lot of squishing. and add the seasonings in at the beginning. and taste broth often to make sure you need to add more seasonings. if it ever gets too thick just add some water, too thin for your liking just boil a little longer and squish peas more so it gets thicker. always follow your instinct.
